For dinner tonight I made herb crusted, baked, line caught haddock with garlic mashed red bliss potatoes and green beans!I wanted to have some kind of SOMEWHAT sustainable food for dinner tonight, so I found the only line caught fish I could find on sale! Haha. Fish are still being over-fished… but it at least has more nutrients and is safer and less cruel than farm fishing….I’ll give this a B! It was good! My first time cooking haddock… so i overcooked it a little— but the crust I got on it with the panko bread crumbs was GREAT! Put a little too much garlic in my mashed too… but oh well! It was an overall good dish. I now know to take my fish out 5 minutes early!

Didn’t get a chance to post pictures of my delicious dinner from last night!

My professor made it in lab yesterday and I loved it so much I HAD to make it for dinner! Plus I thought Chris would love it!

It is brown rice with sauteed garlic, corn, carrots, wilted baby kale in a sesame soy sauce.

It was SUPER easy— legit 30 minute meal. The thing that takes the longest is the rice!

And I added chicken for Chris… because he never stays full with a vegetarian meal. And as you can see… the portion size difference between our plates. My plate is the first one and his is the one at the bottom! I typically give him about double!

You can also top it with cheese or sunflower seeds! (I was GOING to put them both on there but I forgot I was so hungry and excited to eat it….!) Haha

Had Capellini Pomodoro tonight!
I had served it to a million people all day long and was craving it soooo badly— so I made my own when I got home!All it is is angel hair pasta, marinara with finely diced tomatoes and garlic, and basil! Sprinkle with a little cheese on top— and perfecto! Its so funny— it is such a simple meal, but it is so delicious and satisfying.

Here are some pictures of the stuffed peppers I made for dinner! They were SOOO GOOD.

I kind of just winged them too— and it worked out great!

Par-boiled the peppers then stuffed them with a mixture of ground beef, onion, mushrooms, corn, black beans, brown rice, tomato sauce, worcestershire sauce, cumin, cayenne pepper, salt, pepper, italian seasoning, and a few other seasonings. Topped with some cheese and had some sour cream on the side. MUY DELICIOSO!

So for dinner I made Chris and I a healthier version of a favorite meal from my childhood: burger and pasta. That is all. My mom used to just saute some burger and put it over shell pasta with a little bit of butter and salt.

So instead I used 99% lean ground beef, whole wheat pasta— and mixed in some orange and green pepper— and sauteed some zucchini and mixed that in too!

Chris claimed it was so simple but one of the best meals he’s had in a while. :-) Yayayaya!

I also followed through and made banana ice cream! I chopped up two bananas into chips, froze them— and put my own little spin on the recipe that was given! I added 1tbs of honey, 1 tbs of nutella, 1tbs of peanut butter, a couple dashes of cinnamon, 1tsp of vanilla extract, and a splash of skim milk. The milk helped it blend easier and gave it an even creamier consistency. It was kinda like melted ice cream when I was done but I put it in the freezer till after dinner and spooned it into some cups for Chris and I. It was SO GOOD. I was craving a vanilla shake earlier and wanted friendly’s so bad but this little frozen treat helped curb my craving!

ANND we went on a short bike ride to Dad’s grave today. I took a bouquet of flowers with me and it was just so peaceful. I’ll be spending a lot of time there. :-)

Wowwww I love my Nana so much.I got out of work early with intentions to come home and cook some rice, asparagus, and chicken.I get to her house— SHE WAS MAKING THE EXACT MEAL. Oh the universe and your crazy ways!It was so so SO good. She made it even better than me. AND she put zucchini AND asparagus!

So my brother’s party did not go quite as planned…Dave & Busters was INSANE and we couldn’t even get in. So we all just went to Uno’s for dinner and had a blast!This is what I got:Baked stuffed chicken with rice and broccoli! The chicken was stuffed with spinach, feta, broccoli, and tomatoes and the rice had bell peppers chopped up in it. It was so delicious. Ate about half and having the rest for lunch today!

Dinner:Since I am home so late I decided to make a fast, low calorie, low fat dinner.I fried up two egg whites, then steamed some mixed frozen vegetables.Having some tea and dark chocolate for dessert. I am proud of myself today! :D

My dinner last night:Chris and I were going to go to a nice, semi fancy restaurant but they didn’t have available tables till 9:30! So we decided on good old long horn! :DI got salmon with rice and broccoli. :-) I only at about half and had the rest for lunch today! And for an appetizer: shrimp cocktail— and I also had 1 piece of bread a small salad. Such a lovely dinner!

DINNER:
Mom made steak on the grill (she cooks it PERFECTLY), with half a baked potato w/a sprinkle of cheese and some low fat sour cream— and asparagus.I eat a lot of asparagus. Holy crap! And I was proud of myself for taking a small serving of steak. It was so good and it all filled me up perfectly.
I had dinner with Mum and Nan. It was SO LOVELY. I am so blessed to have such a wonderful mother and grandmother— we are so close and it just lifts my soul. They are literally my two best girlfriends (besides sarah). Some may think that that is sad but I could care less— my mother and grandmother are the coolest people I know! (Especially nan. You have NO idea. She is the best grandmother ever.)

I did well eating at friendly’s though!

I got a turkey club with wheat bread and only 2 pieces of bread (it comes with a third in the middle)— and broccoli as my side. Stole a couple of Chris’s fries but no biggie!

And for dessert— two scoops of fat free vanilla frozen yogurt, reeses for a topping… and whipped cream! :D

Total of about 500 calories. :D

Since I’ve worked so hard today (at the gym AND at work) and needed an easy dinner I brought home some soup, salad, and breadsticks.I put some fat free balsamic vinaigrette and some cucumber on the salad! And had about half of the bowl of minestrone soup (the rest to be eaten for lunch tomorrow). Oh and the breadstick. They were CALLING ME at work all night— so I had to have one. :-)

Then I made a little whole wheat pasta on the side with a little bit of margarine and a sprinkle of grated parmigiana.It was probably one of the most delicious things Iv eaten in a while. I didn’t even need the chicken or pasta just the veggies would have satisfied my taste (but I needed the protein for hunger!)
